The Hilton Yala Resort has introduced a new à la carte menu at its Sandali Grill restaurant, featuring locally sourced ingredients and contemporary culinary techniques alongside traditional Sri Lankan flavours.
Hilton Yala Resort has unveiled a redesigned dining menu at Sandali Grill, its signature open-air grill restaurant overlooking the Indian Ocean and Yala National Park. The refreshed offerings combine premium local ingredients with modern cooking methods, drawing inspiration from the surrounding landscape and the region's seafood and produce abundance.
The new menu features handcrafted starters including Carpaccio di Manzo and Tuna Tartare, alongside main courses centred on grilled preparations such as Fresh Water Prawns, Barramundi, Yellow Fin Tuna, and premium beef cuts. The restaurant has also expanded its offerings to include vegetarian and plant-based options, fresh salads, and desserts inspired by tropical flavours. Notably, the menu concludes with house-made gelatos and sorbets exclusive to the resort.
According to Indika Fernando, the Food & Beverage Manager at Hilton Yala Resort, the menu was designed to balance familiarity with culinary adventure while highlighting regional quality and freshness. The resort's leadership emphasises that the new offerings reflect a broader trend among modern travellers seeking authentic cultural connections through food, positioning gastronomy as central to the destination experience.
Sandali Grill operates as one of the property's primary dining venues, serving both resort guests and local diners in an elegant yet relaxed setting. The restaurant benefits from its location within Hilton's only global wildlife resort, allowing diners to enjoy premium cuisine following visits to Yala National Park.
